Which varnish

so a client wants all the steps re doing in her house, she thinks a polyurethane varnish was used last time. My question is, will a polyurethane varnish stand up to being trodden on over the years and will it dry enough to be walked on 4-5 hours later? Don't actually have that much knowledge of varnishes! Also which brand would you guys go with? Cheers
